Lebanese Grilled Eggplant Salad





One of a famous salad we make beside the BBQ is the grilled eggplant salad, it has many varieties to make, the dipp way we call it in middle east " Mutabal" and the salad way which is the real name of baba ganouch in middle east. Today i'll make a Lebanese style baba ganoush salad which is a very tasty grilled eggplant salad with pomegranate. If you a vegan this recipe is perfect for you it has no meat inside just vegetables and tasty taste.



I love salads and every time i make a new one i tried many world wide salads but the most i liked is the mediterranean salads. If you're looking for salads recipes as a side dish then this salad is the one especially for BBQ , i already shared the Fattoush Salad Recipe and today i'll share with you this one and believe me it is so tasty.


Lebanese Grilled Eggplant Salad

Prep time: 10 mins

Grill time: 15 mins on coal - 40 mins in oven

Yield: 2 persons



Ingredients:

2 Medium eggplants

2 medium tomatos

1 small green bell pepper

3 Tbsp spring onion(1 chopped )

1/4 cup chopped parsley

1/4 cup pomegranate



For season:

1 tsp Lemon zest

2 Tbsp lemon juice

2 Tbsp Olive oil

2 Tbsp pomegranate molasses

Salt to taste

1 clove of garlic (optional)



The way:

- Grill eggplant in the oven or over the coal. It takes about 15 minutes on coal.

- Peel of the eggplant and cut it into medium cubes, place it in a salad bowl.

- Remove the tomato seeds, then cut it into small cubes.

- Also cut the green bell pepper into medium cubes.

- Chop the spring onion and the parsley finely.

- Add all the vegetables and pomegranate to the eggplant.

- Season the salad with the mashed clove of garlic, lemon zest, lemon juice, pomegranate molasses, salt and the olive oil. Mix all together.

Serve in With BBQ.
