Best Blueberry Muffins

One of the best muffins i’ve ever made is the Best blueberry muffins, the recipe is so easy it will takes only 15 minutes to prepare with a simple ingredients. If you follow my blog you’ll notice i’ve made lots of muffins recipes, such as almond coconut muffins, orange raisin muffins and others muffins recipes, that’s because i love muffins and always have some on my kitchen. Why not? muffins takes little time to prepare and all the ingredients available in most every house, and family loves it.
What ingredients you’ll need to make Best bluberry muffins?
You’ll need simple ingredients, such as:
- All purpose flour
- Baking soda
- Baking powder
- Pinch of salt
- Soft butter
- Granulated sugar
- Eggs
- Vanilla extract
- Yogurt or sour cream
- Milk
- Fresh or frozen Blueberries
Tips for a successful Best Blueberry Muffins recipe
- Preheat oven at 220C/ 420F , the baking of these degrees should be for just 5 minutes then reduce heat to 180C/ 356F. This step will double your muffins in size and make it more fluffy than cupcakes.
- Add the sugar amount you like, i sometimes add less than 3/4 cup for sugar.
- All the ingredients must be at room temperature, the liquid, eggs and butter, so you have a smooth batter at the end.
- Always bake any type of muffins or cupcake into a preheated oven, if you place the muffin into a cold oven it will take longer and may effect your muffin quality.
- Use any muffin liners, silicone, parchment paper or muffin liners. Also you can butter the mold and dust it with flour.
- If you’ll use a frozen blueberries, let it set at room temperature before add it to the batter.

Ingredients
- 1 and 3/4 cups all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- Pinch of salt
- 120g soft butter
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 125g yogurt or sour cream
- 1/4 cup milk
- 1 and 1/2 cups fresh or frozen blueberries
For topping (optional but it gives a crispy delicious layer):
- 1/4 cup brown sugar
- 1 teaspoon lemon zest
Instructions
- Prepare muffins liners by placing in a cupcakes mould, and preheat oven at 180° C/ 365°F.
- In a large bowl, cream the butter with sugar, then add eggs one at a time with vanilla extract, whisk until you have a smooth egg mixture.
- Add yogurt and give the mixture a quick mix.
- In another bowl sift the dry ingredient, all purpose flour, baking soda, salt and baking powder.
- Add sifted dry ingredients to eggs mixture at two phases, with the milk.
- Mix all together until all well combine.
- Add blueberries, distribute in the batter.
- Spoon the batter with an ice cream scoop and fill each muffin liner.
- Toss the lemon zest with brown sugar, top the muffins with the mixture.
- Bake at 180°C/ 356F for about 25 minutes until gold color.
- Cool on a wire rack.
