Easy Chocolate Cupcakes with Chocolate Ganache topping

Today i’ll share with you my easy Chocolate Cupcakes with Chocolate Ganache topping, the favourite snack for my kids.

The easiness of this recipe is that you can make it with a traditional hand whisk, but this time i added less milk so my topping of cupcakes cracked and thats ok, it still delicious and moist and this cupcakes will covered with chocolate ganache and the top shape will no matter.

What kind of chocolate to use for chocolate cupcakes ganache?

Use any type of chocolate you have, i mixed between dark chocolate and milk chocolate and they were delicious and creamy. Also you should chill your cupcakes after topping with ganache to dry and coherent, or it will be messy when eat it and chocolate will be around your mouth LOL!

And if you would like to pipe it instead of dip it in, just place it in refrigerator for 4 hours and whisk it until smooth as a butter cream batter and pipe your cupcakes.

Prep time: 10 mins       Baking time: 20 mins        Total time: 30 mins

Yield: 12 cupcakes

Ingredients

  • 2 Eggs
  • 1/2 Cup granulated Sugar
  • 1 Teaspoon Vanilla powder or extract
  • 1/2 Cup milk
  • 100 grams Melted Butter (1/2 cup)
  • 1 and 1/2 Cup all purpose flour (185grams)
  • 1 Tablespoon Baking Powder (15grams)
  • 1/4 Cup unsweetened cacao powder 
  • 1 Teaspoon instant coffee (optional)
  • Pinch of salt

For chocolate ganache topping:

  • 100 grams of Chocolate
  • 1/3 Cup hot heavey cream
  • 2 tablespoon of pearl candy (For decoration) 

Instructions

  1. Preper the cupcakes tin by place a cupcakes liners, Preheat oven at 180°C/350F.
  2. In a large bowl mix eggs with sugar, salt and vanilla until sugar dissolve.
  3. Add milk and give mixture a quick mix. Add butter as a line while keeping whisk.
  4. In another bowl, sift flour, cacao powder and baking powder.
  5. Add the dry ingredient to the batter into two phases, until you have smooth cupcakes batter.
  6. With an ice cream spoon fill the cupcakes liners.
  7. Bake in a preheated oven at 180°C/350F for 20 minutes.
  8. Cool on a wire rack while preparing the chocolate ganache.
  9. To prepare Chocolate ganache: Cut chocolate into small pieces to melt better.
  10. In a medium bowl place chocolate, bring the cream to a simmer.
  11. Pour cream over the chocolate, set aside for a minute, then stir together until smooth chocolate ganache.
  12. Dip cupcakes in chocolate ganache. Decorate with chocolate pearl candy.
  13. Chill for 30 minutes before serving to let the chocolate ganache coherent and dry.
  14. Enjoy!
