Spanish Tortilla (Spanish Omelette) Recipe
When i was living in spain one of the most famous spanish appetizer or at any time quick meal is Spanish Tortilla(Spanish Omelette). It is so easy to make with only two main ingredients eggs and potatoes. Some people in spain add additional of veggie as onion, espaniche or garlic. But i prefer it simple and full of potatoes, and that’s the main recipe, which i love.
To prepare this lovely recipe i suggest to buy potatoes using for poached, and turn tender quickly so not to wait to much until potatoes cooked. In Belgium it’s easy to find several type of potatoes in supermarkets, but of course you can use the one in hands.

Spanish Tortilla(Spanish Omelette)
PREP TIME: 5mins COOKING TIME: 15 mins TOTAL TIME: 20 mins
YIELD: 6 slices
INGREDIENTS
- 5 medium potatoes
- 5 Eggs
- 4 tablespoon olive oil(Add more if needed)
- Salt, as desired
- Black pepper, as desired
INSTRUCTIONS
- Wash and peel of 5 medium potatoes or 4 large potatoes.
- Cut potatoes into a small dices.
- In a medium bowl, place 5 eggs and season with salt and black pepper as desire. Whisk to combine.
- In a hot skillet, bring olive oil to a simmer. Add diced potatoes and stir. Cover and cook on a medium heat.
- Stir occasionally, until potatoes tender add salt as desire.
- Pour the eggs on to the tender potatoes, cover and cook for 4 minutes.
- Smooth the edges with a tablespoon, flip the tortilla in a plate in upside down one quick motion and remove the pan.
- Slide the tortilla semi-cooked side down, back to the pan( on this step you can add to pan more olive oil).
- Smooth the edges, cover and cooked for 3 to 4 minutes until done.
- Slide the tortilla into a platter.
- Garnish with parsley.
- Cut as desire.
- Enjoy!
