Vegetable Loaf

Ingredients:

For the dough:
4 cups all purpose flour
1 teaspoon sugar
Salt to taste
1 Tbsp of instant yeast
2 Tbsp olive oil
1 egg
1 cup warm milk
For Stuffing:
1 cup peas
2 carrots
1 tomato
1 medium Zucchini
1 medium potato
1 sweet pepper
1 medium onion
1/2  cup of chicken stock or water
4 tbsp vegetable oil
1/4 tsp black pepper
Salt to taste
1 tsp Paprika

Egg wash:
1 egg yolk
1 tsp water or milk
Sesam (optional)
The way:
– In mixers bowl, place the flour, dry ingredients and egg. Knead on low speed, then add the milk gradually until you have a smooth elastic dough.
– Shape the dough as a ball then place it in a bowl grease with olive oil, cover with a kitchen towel and place it in a warm place for 40 mins.
– To prepare the stuffing: Cut the vegetables into a medium cubes.
– In a large pan place the olive oil, then add the onion, carrot, potato, sweet pepper and peas stir for 2 minutes then add the tomato and zucchini, pour above the chicken stock. Bring to simmer until the liquid absorb.
– Paint the circle oven tray “25 CM” with oil then place the half of the dough onto the bottom to the edge, then add the stuff, above it place the remain half dough layer.
– Cut any Extra dough knead it again and shape it to 3 long rolls and make a braid then decorate the edge of the loaf with it.
– Paint the loaf with egg wash, sprinkels sesam (optional).
– Bake at preheated oven 180°C for 30 mins or until golden color.
