Parmesan Baked Eggplant Recipe – Quick & easy

 This is the easiest and delicious Parmesan Baked Eggplant recipe also it is a quick to prepare, ready in just 30 minutes. I prefer making baked eggplant recipe than fried eggplant, it is more delicious and less greasy.

Also, i used only less than 6 tablespoon of melted butter preparing this recipe. The loveliness of this recipe is that you can make it as a snack or as a side dish for dinner or for a quick meal.

Parmesan Baked Eggplant Recipe also perfect for a vegetarian friends, i use a vegetable butter and if you have any problem with dairy you can just ignore adding parmesan cheese and you’ll have a good and easy vegetarian baked eggplant.

Notes

  • Make sure to cut the eggplant into a fit slices, so it won’t be so thick and turned mushy in at the end or too thin and be so crunch.
  • Drain the eggplant slices from extra water, so when it baked the water not affected the crunchy layer and turned mushy.
  • It’s better to bake the eggplant slices on a wire rack, so the heat distribute from all sides especially from the below.

Can i use a skillet instead of baking the Parmesan Baked Eggplant?

Yes, you can make it in a skillet instead of oven, just be sure that you cook it on a medium heat, so it takes time to tender and well cooked from the inside.

Parmesan Baked Eggplante recipe – Quick & easy

Yield: 2 persons

 

Prep Time: 5 minutes

 

Cook Time: 30 minutes

 

Total Time: 35 minutes

Ingredients

  • 1 large eggplant
  • 1 cup and a half breadcrumbs
  • 3 tablespoons of Parmesan cheese
  • Pinch of black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon of paprika
  • 1 Teaspoon oregano
  • 6 Tbsp Melted butter

Instructions

    1. Cut eggplant into 1/2 inch slice.
    2. Place eggplant slices on a board, sprinkle salt from two side of each eggplant slice. Leave eggplant to drain water for 15 minutes.
    3. With a kitchen paper towels, drain eggplant slices from extra water.
    4. In a medium bowl, mix breadcrumbs with parmesan cheese, garlic powder, black pepper, paprika and oregano.
    5. Dip eggplant slice in melted butter, then cover with breadcrumbs mixture.
    6. Place in a baking sheet.
    7. Bake in preheated oven 200C/400F for 15 minutes, then flip to other side continue bake until golden brown color.
    8. Enjoy!
