These Fluffy Orange Raisin Muffins deliver all that and more. I guarantee, once you try them, you’ll want to bake them every week.
What makes these muffins stand out is their beautifully tall, domed tops. Achieving bakery-style height at home isn’t hard when you know the secret. Start baking at 220°C (425°F) for the first 8 minutes to give the batter a quick lift. Then, without opening the oven, reduce the temperature to 180°C (365°F) and finish baking. This simple trick traps steam inside and encourages the muffins to rise tall and fluffy.
You don’t need fancy equipment or special ingredients just a bowl, fresh oranges, and your favorite raisins. With just a little effort, you’ll have warm, golden muffins with heavenly aroma and flavor.
