4 Easy Valentine’s day desserts for two

Valentine’s day is 4 days away from now and i’d like to share with you these lovely and 4 easy Valentine’s day desserts for two, you and your beloved one. The ideas is to make a delicious dessert for your partner as they said” The way to a man’s heart, is his stomach”.

Haha i know this is crazy but men are crazy about food, ask me i’m married for more than 10 years now and my husband adore food.

I’ve added in this post a four easy desserts, mini Rose apple pies, chocolate lava cake, eggless tiramisu and red velvet cupcakes. I hope youll enjoy your 4 Easy Valentine’s day desserts for two.

MINI APPLE ROSE PIES

These mini tarts not only have a wonderful shape, but also a tasty apple pie flavour. I used to make old fashioned apple pie with my mother but after getting married i start to try my own recipes and try new things with old fashioned recipes, cooking was my hobby and my over time fun.
It may looks difficult to make and i may take some time with shaping the roses, but it worth every single moments, the result were incredibly awesome not only the shape but also the taste.

Mini Apple Rose pies- Rose Apple Tartelettes

Yield: 4 pies
Prep Time: 40 minutes
Cook Time: 40 minutes
Total Time: 1 hour 20 minutes

Ingredients

For Pastry Crust:

  • 2 and half cups all purpose flour
  • 150g unsalted cold butter
  • 1 Tsp sugar
  • 1 cup cold water
  • 1/2 tsp salt

For filling pureé:

  • 2  Large apple
  • 1/4 tsp cinnamon
  • 1 tbsp sugar
  • 1 tsp lemon juice

For syrup:

  • 1 cup sugar
  • 1/4 cup lemon juice
  • 1 cup water

For apple roses:

  • 4 large red apples

Instructions

    1. For crust: In a bowl mix all the ingredients together until you have a crumbled dough. Gather it, cut the dough into 4 equal balls, place each in a plastic wrap, refrigerate for 30 minutes.
    2. Meanwhile, prepare the apple puree, peel of apple and cut it into medium dices cook on steam for 10 minutes. Blend apple with cinnamon and sugar until you have a puree, set a side.
    3. Spread each dough ball with a roller, place it in a 12 cm removable bottom tart pan, lightly prick bottom of pastry crust with the tines of a fork
    4. Fill the pastry crust with apple puree.
    5. Bake at 180°c for 20 minutes.
    6. Cut apple into a very thin slices, i used the vegetable slicer (mandolin) it gave a perfect result.
    7. In a saucepan pour water add sugar and limon juice, bring to a boil in high heat. Place the apple slices into the hot syrup, set a side for 10 minutes.
    8. Drying apple slices from water, assemble the rose; 5 apple slices at a time roll it as a rose shape.
    9. Row the apple roses in the tart crust, bake for another 20 - 25 minutes at 170°C.
    10. Sprinkle confectioners sugar, for more decoration.
    11. Serve it warm or cold.

Easy Eggless Tiramisu 

This recipe is so easy to make, with a very simple ingredients and also it is quick to make, and ready in just 10 minutes. I”d like to add that it takes less time if you use ready to use whipped cream. Also these Tiramisu individual cups, are more elegant from the one pot tiramisu, you can make it as a quick dessert for your Valantine’s day, weekends or at holidays

Yield: 3 Cups
Prep Time: 10 minutes
chill Time: 4 hours
Total Time: 4 hours 10 minutes

Ingredients

  • 250g Mascarpone cheese (room temperature)
  • 1/2 cup cold whipped cream
  • 1 tsp vanilla extract
  • 1/4 cup granulated sugar (3 tbsp)
  • 1 tbsp Instant coffee
  • 1 cup hot water but not boiling
  • 1 Tbsp cacao powder
  • Ladyfingers cookies (4 Biscuits for my cups)

Instructions

    1. Whipped cream at medium speed until coherent.
    2. In a bowl cream cheese with vanilla and sugar, add whipped cream and mix all together until well combined.
    3. Place cream tiramisu in a decorating bag with A1 tip.
    4. In a plate mix coffee with water.
    5. Take one of ladyfingers cookies and cut it as the size of your serving cups. Dip it quickly in the coffee, (if you over dip it you'll have a soggy cookies).
    6. Place cookies in the serving cups, add a layer of tiramisu cream, then another layer of cookies.

    8. Chill at least 4 hours or overnight.

Chocolate Lava Cake 

Best way to make your own chocolate lava cake as a professional, while this seems hard it actually quite easy, with so simple ingredients and it just takes 10 minutes to make and 15 minutes to bake. And the result is a soul satisfied chocolate cake smooth, delicate and delicious with crusty top and runny chocolate inside.

Cook Time: 15 minutes
Total Time: 25 minutes

Ingredients

  • 130g dark Chocolate (1 Cup)
  • 70 g unsalted butter
  • 2 eggs
  • 1 teaspoon vanilla extract
  • Pinch of Salt 
  • 3 tablespoons sugar
  • 1 tsp expresso coffee (optional)
  • 2 tablespoons flour

To grease the ramekins:

  •  1 teaspoon butter  
  • 2 tablespoons cocoa powder

Instructions

    1. Preheat oven at 200°C. Prepare ramekins by greas with butter, then dust with powdered cocoa and remove the excess by flipping the molds upside down.
    2. Cut the chocolate into small pieces to melt easily. Melt the chocolate with butter in microwave for 40 secondes. Stir the mixture until you have a smooth chocolate mixture, set a side.
    3. In a large bowl, mix eggs, sugar, salt and vanilla. stir until the sugar dissolves in the egg mixture, then add the flour and coffee, give it a quick mix. Add melted chocolate to the mixture in two phases with continuous stirring until the mixture is completely mixed.
    4. Pour the cake mixture into the prepared ramekins.
      Bake the molds in a preheated oven at 200 °C for 15 minutes.
    5. Decorate with powdered sugar.

Red Velvet Cupcakes

These Red Velvet Cupcakes are so delicious topped with cream cheese frosting are simple and perfect for any time and especially in valentine’s day.

Cook Time: 20 minutes
Total Time: 30 minutes

Ingredients

  • 2 Eggs
  • 3/4 cup sugar
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • 1/3 Cup vegetable oil
  • 1 and 3/4 cup all purpose flour
  • 2 tablespoon cacao powder
  • 1 tbsp baking powder
  • 5 Drops of Red food color

For cream cheese topping:

  • 50g Soft butter 
  • 250g cream cheese
  • 1/2 cup powdered sugar 
  • 1 tbsp milk 
  • 1 tsp vanilla extract

Instructions

    1. Preper the cupcakes tin by place a cupcakes liners, Preheat oven at 180°C/350F.
    2. In a large bowl mix eggs with sugar, salt and vanilla until sugar dissolve.
    3. Add milk and oil give mixture a quick mix.
    4. In another bowl, sift flour, cacao powder and baking powder.
    5. Add the dry ingredient to the batter into two phases, until you have smooth cupcakes batter.
    6. With an ice cream spoon or two teaspoons fill the cupcakes liners.
    7. Bake in a preheated oven at 180°C/350F for 20 minutes.
    8. Cool on a wire rack while preparing the chocolate ganache.
    9. To prepare Cream cheese : Cream butter with cream cheese, add sugar and mix until smooth cream cheese, add vanilla and milk and mix until smooth cream cheese.
    10. Place cream cheese in a decorating bag, with a star tip, decorate the top of the cupcakes.
    11. Chill for 30 minutes before serving.
