Apple Pie Muffins Recipe – Easy Breakfast

 
It is the end of apple season and nothing perfect than a delicious muffin with a cup of tea for breakfast or as a snack, and these easy and delicious Apple Pie Muffins Recipe – Easy Breakfast are perfect. I love apple and this time i just trying to benefit of the tasty recipes with apple. I was confused which recipe to make apple pie cupcake or muffin cupcakes well i decided to make a mix of this and yes i’m so satisfied of the result a delicious cupcake filled with caramel apple, so i called it apple pie muffin.

How to make Apple Pie Muffins Recipe?

Prep time: 15 mins
Baking time: 25 mins
Total time: 40 mins
Serving: 10

Ingredients:

  • 100g butter
  • 2 eggs
  • 3/4 cup sugar
  • A teaspoon of vanilla extract
  • 1 and 3/4 cups all purpos flour
  • A tablespoon of baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 cup milk 
     

for filling:

  • 2 cups apple (2 medium apple)
  • 1/4 cup brown sugar
  • 1 tsp lemon juice
  • 1/2 tsp ground cinnamon
     

    INSTRUCTIONS:

  1. Preheat oven at 180°C and prepare the cupcake mold by placing the muffin liner.
  2. Prepare the filling: Peel the apple and cut into medium dices, cook with sugar on high heat add lemon juice and cinnamon, cook for 5 to 7 minutes until sugar caramelise. Set a side to cool while prepare cupcake batter.
  3. To prepare the cupcake batter: In a large bowl mix butter with sugar until combine, add eggs one at a time with vanilla extract mix until smooth.
  4. Sift the dry ingredients, then add it to the mixture into two phases with the milk.
  5. Mix all together until you have a smooth cake mixture.
  6. Fill the muffin liner 1 tbsp cupcake mixture and fill with 1 tbsp of apple then cover with another tablespoon of cupcake mixture, until filled three quarter of each muffin liner.
  7. Bake at 180°C for 25 minutes. When out of oven let it cool on wire rack.
  8. Decorate with Caramel sauce and walnut.
