These 3 easy Cookies for christmas are perfect and delicious for your christmas tea time. The french sable cookies dough is a little less sweet than a sugar cookie dough and a little less rich than shortbread dough, and it’s perfect to hold soft fillings like pastry cream or fresh fruit jam without getting soggy. Pistachio ma’amoul is an arabic tasty buttery shortbread cookies stuffed with pistachio or date paste, and sometimes with walnuts. These mouth watering cookies once you taste one you can’t stop. So delicious and tasty cookies i’ve ever tasted. It is famous in middle east especially in Eid, Easter holiday and christmas times. And the last recipe is my way of making an amazing 10 minutes tea cookies, which you can shape and fill with whatever you like.
Notes for a successful 3 easy cookies for christmas
- Bake Cookies at 170C- 338F. Maamoul cookies should bake on a high temperature 220C- 420F.
- When out of oven make sure to sprinkle powdered sugar immediately so it sticks well at the top of cookies.
- If your mold stick dust it with a little bit of flour.
- Don’t use the fine grains semolina in maamoul recipe.
- Sable dough will be soften and prefer to flatten and cut at parchment paper so it wont crack when transfer it.

Date Paste Recipe for Cookies and date squares Filling
French Sable Cookies
Ingredients
- 2 cups all purpos flour (250 grams)
- 1 Egg
- 1 Tbsp vanilla extract
- 150 grams Butter (Soft) ½ cup + 2 tablespoon
- ½ cup sugar (100 grams)
For filling:
- ½ cup Strawberry jam
For decoration:
- ½ cup Confectioner sugar
Instructions
- In a large bowl, cream butter with sugar until combined.
- Add egg and vanilla, mix with a wooden spoon until well combine.
- Flatten the dough, cover with plastic wrap, refridgrate for 2 hours.
- Cut as a circle with sableé cutter, i use decorating tip to make the middle circle.
- Bake in a preheated oven 170°C for 13-15 minutes.
- Sprinkle confectioners sugar at the top when it out of oven.
- Cool down before fill it with jam.
- Fill With jam, and cover with the sugar cookies carefully.

Pistachio cookies Ma'amoul
Ingredients
- 1 cup Semolina medium grains
- 2 Cups All purpose flour
- ½ Cup Melted butter 100 grams
- ½ Cup Vegetable oil 100 ML
- 4 Tbsp Sweet condensed milk
- ¼ tsp dried yeast (optional)
- ¼ tsp Baking soda
- 4 Tbsp Rose water
For filling:
- ¾ Cup pistachio
- 2 Tbsp sugar syrup
- 1 Tbsp rose water
For Decoration:
- ½ cup Powdered sugar
Instructions
- In a large bowl mix the semolina and flour then add the butter and oil, mix all together until you have a cookies dough. Don't over mix just to combine. Cover and let it rest at least 2 hours or overnight.
- To the dough add the yeast, baking soda, sweet condensed milk and the rose water, knead all until well combined.
- To prepare the filling: in a medium bowl place the crushed pistachio, sugar syrup and the rose water mix with a spoon together.
- Take a small amount of the dough and shape as a ball, at the middle make with your finger a small hole, add 1 tbsp of pistachio filling, then close firmly.
- Place the cookie ball in a cookie mold or ma’amol mold(i bought it from a chinese store) Then, flip the cookie upside down and click the edge of the cookie mold to let the piece get out. If you don't have a ma'amol mold you can shape the top with a fork as classic cookies shape.
- Place the cookies on an oven tray.
- Bake it in a preheated oven 220°C for 10 to 15 mins until golden color.
- Sprinkle the powdered sugar immediately above the cookies when out of the oven.

10 minutes Eggless Tea cookies
Easy 10 minutes tea cookies with only 4 ingredients to make so delicious and melt in mouth
Ingredients
- 1/2 cup powdered sugar
- 1 cup melted butter or vegetable oil
- 2 cups all purpose flour
- 1/4 cup powder milk
- 1 tablespoon cacao powder( optional) add it for chocolate cookies
for decoration(optional)
- 2 tablespoon melted dark chocolate
- 2 tablespoon melted white chocolate
for filling (optional):
- Nutella and strawberry jam
- date paste
Instructions
- In a large bowl whisk melted butter with sugar, give your mixture a quick mix until sugar dissolves. Add all purpose flour and milk powder.
- Combine all together until you have a soft cookies dough, (knead the dough if it turn too mushy add more flour, and if it crumble add 1 tablespoon of butter until you have the smooth dough as shown the video below)shape your dough as a large ball.
- Cut the dough into two halves, place a half into a bowl. To the remain half add cacao powder, knead with hands until you have a chocolate cookies dough.
- Take a large ball and flatten with a roller, cut with cookies cutter as heart shape or as a desired.
- Shape cookies as small balls, place them simply in your baking sheet.
- With small spoon or with finger press to make a cavity at the middle of the balls, fill with strawberry jam.
- Repeat the same with chocolate cookies.
- Bake at preheated oven 170°C / 380F for 7 to10 minutes.
- Let cookies cool before transfer it.
- Decorate the top of cookies with melted chocolate and melted white chocolate.
- Fill the chocolate cookies with nutella and jam.
