Coconut Christmas Cupcakes

We are 6 days away from christmas, so i made these lovely Coconut Christmas Cupcakes with white chocolate ganache for topping and they were turned so delicious and tasty, and they were loved by my kids.

I used two types of coconut to make my recipe, the shredded coconut and the coconut flakes, but you can use the shredded coconut to decorate and make the cupcakes. I believe this recipe is so easy to make with simple ingredients. For decoration you can use melted white chocolate, or melted green candy to draw the christmas tree. Use salted sticks, also you can make it with chocolate sticks.

Tips for a successful Coconut Christmas Cupcakes

  • Having all ingredients as Eggs, milk and butter at room temperature help your cupcake puffs.
  • Make a smooth cupcake batter that traps air and expands when heated in the oven. That expansion makes your cupcake fluffy and light.
  • You can add one teaspoon of apple cider viniger which will work as a nutural baking improver.
  • Bake cupcake in preheated oven at 180°C/ 365°F for 20 to 25 minutes or until golden.
  • Let cupcakes cool befor dipping it in chocolate ganache.
  • After making the decoration trees, chill at least for 1 hour until well set and you can easily move it.

You’ll need simple and easy ingredients to prepare this lovely and delicious cupcakes, such as:

  • Butter
  • Eggs
  • Sugar
  • Vanilla
  • Milk
  • All purpose Flour
  • Baking powder

and for decoration:

  • White chocolate( for ganache)
  • heavy cream
  • White chocolate for drawing christmas tree
  • Green candy melts such as deco milk (optional)
  • Candies such as m&ms
  • Salted sticks or chocolate sticks

Ingredients

  • 110g soft butter (half cup)
  • 3/4 cup granulated sugar (150g)
  • 2 eggs
  • 1 teaspoon vanilla powder or extract
  • 1 and 1/4 cup all purpose flour
  • 3/4 cup shredded coconut
  • 1 tbsp baking powder
  • Pinch of salt
  • 1/2 cup milk

for Chocolate ganache

  • 100g White chocolate (cut into small pieces)
  • 1/4 cup hot heavy cream

For Decoration(optional)

  • Coconut flakes (optional)
  • 100g melted White chocolate
  • Salted sticks
  • Candies

Instructions

  1. Prepare cupcake mold by placing cupcake lineres, preheat oven at 180c.
  2. In a large bowl mix the butter with sugar, add 2 eggs one at a time and mix and the second egg with vanilla and mix.
  3. Add sifted flour with baking powder and salt with half amount of milk. Mix all together until smooth batter.
  4. Add shredded coconut with the remain milk, mix until ready batter. With spatula be sure all the ingredients well incorporated.
  5. With an ice cream scoop, spoon the batter and fill the cupcake lineres.
  6. Clean any drops with a kitchen paper towels.
  7. Bake in preheated oven at 180 C/356F for 25 minutes or until golden top.
  8. Cool cupcakes on a wire rack before decorate.
  9. Heat cream, then pour on the white chocolate. Set for a minute then stir until smooth ganache.
  10. Dip cupcake in the chocolate ganache then sprinkle coconut flakes.
  11. Melt white chocolate in microwave for 1 minute, stir until smooth melted chocolate. Fill chocolate in parchment paper bag. On a sticks make a shape of lines as christmas tree. decorate with candies. Chill for hour.
  12. Insert sticks tree at the middle of each cupcake.
  13. Enjoy!
