Revani Semolina Cake in Syrup

In Turkish they call it Revani, also known in Greece as Reh vah nee or Revani semolina cake but with a little difference, which they made it with orange flavour. .This dessert has been famoused since the ottoman period and spread in the middle east with the name basbousa.

You just want a simple ingredients to make this dessert and you’ll have a very delicious simple dessert made of yellow semolina covered with a syrup tasty and rich with coconut flavour.

Prep time: 15 mins
Baking time: 35 mins

Ingredients:
1 Cup medium grains semolina
1/2 cup sugar
2 eggs
1 tsp vanilla extract
1/2 cup shredded coconut
1/2 cup vegetable oil i use sunflower oil
1 tbsp baking powder
125g yogurt

For syrup:
1 1/2 cups sugar
1 1/2 cup water
1 tbsp lemon juice

For decoration:
Pistachio slices
shredded coconut
Raspberries

The way:
– Prepare the syrup: in a high heat place the saucepan, pour the water add the sugar and bring it to boil.
– When it boil add the lemon juice let it boil for 1 minutes and remove from heat. Cool down at room temperature.
-Mix the eggs with sugar and vanilla until lighten color, then add yogurt, shredded coconut, baking powder, semolina and oil. Mix all together until all well combined.
Butter 10 X 7 inch pyrex oven dish.
Pour the cake mixture into the oven dish.
Bake at preheated oven 180°C for 35 minutes.
Let it cool for 5 minutes on a wire rak, then drizzle the cold syrup all over the semolina cake. Let the cake absorb the syrup and cool down.
Cut the cake in a square. Decorate with shredded coconut and pistachio.
