Ingredients
- 1 large egg
- 1 teaspoon vanilla extract any variety
- 1 tablespoon granulated sugar
- 1 cup all-purpose flour 125g
- 1 teaspoon baking powder 5g
- Pinch of salt
- ¾ cup milk 200ml
- Maple syrup for serving (optional)
Instructions
- In a small bowl, beat the egg with a fork. Add the vanilla extract and sugar, then whisk until the sugar is fully dissolved.
- Pour the egg mixture into the milk and stir until well combined.
- In a large mixing bowl, whisk together the flour, baking powder, and a pinch of salt.
- Gradually pour the milk and egg mixture into the dry ingredients. Whisk until you achieve a smooth, lump-free batter.
- Pour the batter into a decorating or piping bag and seal it tightly. This makes it easier to portion out mini pancakes.
