- 1 large egg
- 1 teaspoon vanilla extract any variety
- 1 tablespoon granulated sugar
- 1 cup all-purpose flour 125g
- 1 teaspoon baking powder 5g
- Pinch of salt
- ¾ cup milk 200ml
- Maple syrup for serving (optional)
In a small bowl, beat the egg with a fork. Add the vanilla extract and sugar, then whisk until the sugar is fully dissolved.
Pour the egg mixture into the milk and stir until well combined.
In a large mixing bowl, whisk together the flour, baking powder, and a pinch of salt.
Gradually pour the milk and egg mixture into the dry ingredients. Whisk until you achieve a smooth, lump-free batter.
Pour the batter into a decorating or piping bag and seal it tightly. This makes it easier to portion out mini pancakes.
Preheat a non-stick skillet over medium heat. Pipe small rounds of batter onto the skillet. Cook for about 30–45 seconds or until the tops begin to set. Flip using a spatula and cook the other side for another 20–30 seconds.
Depending on the size of your skillet, you may need to cook the pancakes in batches. Each mini pancake takes less than a minute to cook.
Serve warm with maple syrup or your favorite toppings.
