Chocolate Lava Cake

Best way to make your own chocolate lava cake as a professional, while this seems hard to make, it actually quite easy, with so simple ingredients available at home and it just takes 10 minutes to prepare and 15 minutes to bake. And the result is a soul satisfied smooth chocolate cake, delicate and delicious with crusty top and runny chocolate inside. This fabulous lava cake perfect for any special occasion, for your anniversary day or for your valentine’s day.

You’ll need a simple Ingredients to make this lovely recipe such as:

  • Dark Chocolate
  • Butter
  • Eggs
  • Vanilla extract
  • Sugar
  • Flour

What kind of chocolate to make this recipe?

Use any type of your prefer chocolate, but i think the perfect taste for lava cake is the dark chocolate. I use a Belgian chocolate or a cooking dark chocolate. Honestly, i didn’t prefer chocolate milk in lava cake, i find the taste is milky and fatty, but you can make it with milk chocolate it depends on a personal taste 🙂

Tips for a successful Chocolate Lava cake:

  • Melt chocolate with butter and let it cool before adding it to the batter.
  • Use a good quality of chocolate and butter to get a nice taste.
  • Don’t over bake your lava cake when you feel the edges is set and the middle of the cake is still mushy then this is the perfect cook you’ll need.
  • Grease the ramekins with butter and dusted with cocoa powder to avoid stick of the cake.
  • Bake lava cake in preheated oven at medium heat.
  • If you need the chocolate in lava cake stable, wait 10 minutes before serving. The chocolate will be more liquid when serving it immediately as in the photo.

Ingredients

  • 130g dark Chocolate (1 Cup)
  • 70 g unsalted butter
  • 2 eggs
  • 1 teaspoon vanilla extract
  • Pinch of Salt 
  • 3 tablespoons sugar
  • 1 tsp expresso coffee (optional)
  • 2 tablespoons flour

To grease the ramekins:

  •  1 teaspoon butter  
  • 2 tablespoons cocoa powder

Instructions

    1. Preheat oven at 200°C. Prepare ramekins by greas with butter, then dust with powdered cocoa and remove the excess by flipping the molds upside down.
    2. Cut the chocolate into small pieces to melt easily. Melt the chocolate with butter in microwave for 40 secondes. Stir the mixture until you have a smooth chocolate mixture, set a side.
    3. In a large bowl, mix eggs, sugar, salt and vanilla. stir until the sugar dissolves in the egg mixture, then add the flour and coffee, give it a quick mix. Add melted chocolate to the mixture in two phases with continuous stirring until the mixture is completely mixed.
    4. Pour the cake mixture into the prepared ramekins.
      Bake the molds in a preheated oven at 200 °C for 15 minutes.
    5. Decorate with powdered sugar.
