Belgian Liege Waffles

This is the best and easiest way to make Belgian Liege Waffles; they are made from a dough that is similar to brioche, with pearl sugar mixed in, which caramelizes on the outside of the waffle when it is cooked.

Liege waffles are typically denser and sweeter than Belgian waffles and have a chewy texture, they are made with a sweet dough that is studded with pearl sugar, which caramelizes as the waffle cooks, creating a crispy and caramelized exterior. They are often served plain or with toppings such as whipped cream, chocolate, or fruit. I like to serve it pure and enjoy it warm, but you can serve it with what you wish.

 I live in Belgium, it is easy to find waffle places near my home here, but I prefer to make them at home for my lovely girls, nothing beats homemade baking and the delicious smell coming from the kitchen, the sense of a cozy and loved home. The recipe is so easy, and the ingredients are available at most of our homes to make at home, but you need a waffle maker or iron to make your own waffles at home.

What ingredients you need to make this delicious waffles?

You’ll need simple ingredients to make it, such as:

  • Flour
  • Unsalted butter, softened
  • active dry yeast
  • Milk
  • Sugar
  • Egg
  • pearl sugar
  • Pinch of Salt

How to make a Belgian Liege waffles ? (full instruction below)

  • In a warm milk, dissolve the yeast with 1 tablespoon of sugar and let sit for 5 minutes until it becomes frothy.
  • Knead all of the ingredients until a smooth, elastic dough forms.
  • Allow the dough to ferment for about an hour.
  • Once the dough has risen, mix the pearl sugar with the dough and then divide it into 10 equal pieces.
  • Bake it in a waffle maker until it is crispy and golden brown.
  • Serve it with your favorite topping.

Ingredients

  • 350g All-purpose flour
  • 1/2 cup warm milk (add more or less depends on flour type)
  • 1 teaspoon yeast
  • 1 tablespoon sugar
  • 1/4 teaspoon salt
  • 1 egg
  • 1 teaspoon vanilla extract
  • 90g unsalted butter, softened
  • 120g Pearl sugar

Instructions

    1. In a measuring cup, in warm milk, dissolve the yeast with 1 tablespoon of sugar and let sit for 5 minutes until it becomes frothy.
    2. Place the flour, egg, vanilla extract, salt, and milk mixture in the mixer bowl and knead at a slow speed.
    3. Cut the softened butter into small pieces and gradually incorporate it into the dough while kneading. Mix until a smooth, elastic dough is formed. 
    4. Cover the bowl with a clean kitchen towel and set aside for 1 hour to rise.
    5. Once the dough has risen, add the pearl sugar and knead it in by hand until it's evenly distributed.
    6. Preheat your waffle iron to medium-high heat.
    7. Divide the dough into 8-10 equal portions and form them into balls.
    8. Place 2 balls onto the waffle iron and cook until golden brown and crispy.
    9. Repeat with the remaining dough balls.
    10. Serve it with your favorite toppings like whipped cream, fresh fruit, or chocolate sauce.
    11. Enjoy!
