Ingredients

  • 2 eggs
  • 3/4 cup sugar
  • pinch of salt
  • 1 Teaspoon of vanilla extract
  • 3/4 cup milk
  • ½ cup of vegetable oil
  • 1 and 3/4 Cup all purpose flour
  • 1 Teaspoon baking powder
  • ½ Teaspoon baking soda

For topping:

  • 250ml / 1 cup whipped cream
  • 1 teaspoon vanilla extract
  • 2 tablespoon of sugar or to taste
  • Fresh Strawberries

Instructions

  1. Place muffin liners in a cupcake mold and preheat the oven to 180 °C.
  2. Mix sugar, eggs, a pinch of salt, and vanilla extract until the sugar dissolves.
  3. Add milk and vegetable oil; give it a quick mix.
  4. In another bowl, sift flour, baking powder, and baking soda.
  5. Add the sifted ingredients to the liquid mixture in two batches, mixing well after each addition.
  6. With an ice cream scoop, fill the muffin liners with cupcake batter.
  7. Bake at 180 °C for 20 minutes. Cool on a wire rack

  2. Whip cream until it is smooth; don't overwhisk or the cream will crumble.
  3. Fill whipped cream into a decorating bag with a star tip, decorate cupcakes, and top with strawberries.
