French Sable Cookies (Sablés à la Confiture)

Today i’ll share with you my recipe and my way of making sableé cookies or short dough cookies a very tasty for your afternoon tea time. The dough is a little less sweet than a sugar cookie dough and a little less rich than shortbread dough, and it’s perfect to hold soft fillings like pastry cream or fresh fruit jam without getting soggy.
To do this easy recipe you have just to mix butter with sugar, add egg and flour.Chill then cut and bake. The final dough bakes up with a nice delicious crispy bites. These yummy cookies have many names such as pâte sableé, sweet dough, short dough , tart jam and tart dough.
Well, call it with any names the result is a (delicious cookies).
Can i fill it with another filling?
Yes, you can fill it with chocolate paste or any jam flavour such as apricot, red berries or orange.
Why the dough takes 2 hours to chill?
The dough is soft and crumbly, and it must rest at least 2 hours until it holds together and you can shape it easly. The perfect way to has a good sablé is to cut it at the same parchment paper, and transfer the cookies with the parchment paper to a tray.
What ingredients you’ll need?
- Flour
- Butter
- Eggs
- Sugar
- Vanilla
- Jam
How to make Sablé cookies?
- Cream butter with sugar until combined.
- Add egg and vanilla, mix with a wooden spoon until well combine.
- Add flour into two phases, knead into a ball.
- Flatten the dough, cover with plastic wrap, refridgrate for 2 hours.
- Cut as a circle with sableé cutter, i use decorating tip to make the middle circle.
- Bake in a preheated oven 170°C / 360F for 13-15 minutes.
- Sprinkle confectioners sugar at the top when it out of oven.
- Cool down before fill it with jam.
NOTES
- The dough must rest at least 2 hours.
- Sable dough will be soften and prefer to flatten and cut at parchment paper so it wont crack when transfer it.
- Sprinkle confectioners sugar immediately on the top of cookies when out of oven, so the sugar will stick betterly.
- Don’t over bake cookies, after 12 minutes check it so it won’t over baked.

Ingredients
- 2 cups all purpos flour (250 grams)
- 1 Egg
- 1 Tbsp vanilla extract
- 150 grams Butter (Soft) ½ cup + 2 tablespoon
- ½ cup sugar (100 grams)
For filling:
- ½ cup Strawberry jam
For decoration:
- ½ cup Confectioner sugar
Instructions
- In a large bowl, cream butter with sugar until combined.
- Add egg and vanilla, mix with a wooden spoon until well combine.
- Flatten the dough, cover with plastic wrap, refridgrate for 2 hours.
- Cut as a circle with sableé cutter, i use decorating tip to make the middle circle.
- Bake in a preheated oven 170°C for 13-15 minutes.
- Sprinkle confectioners sugar at the top when it out of oven.
- Cool down before fill it with jam.
- Fill With jam, and cover with the sugar cookies carefully.
