Lebanese nights dessert – No Bake Leche cake dessert

Well! today’s dessert is Lebanese nights dessert, a little bit different from what i’ve used to make, but as i mentioned before i love new recipes and middle eastern recipes, so i have tried this recipe and it become my favorite dessert, they called it Lebanon nights, but i found the name a little bit weird for this white clear shiny dessert so i called it Leche cake. Anyway, i love to make this dessert because it is easy and delicious and it takes only few minutes. If you are vegan, just use almond milk or coconut milk instead of milk.

No-Bake Leche cake dessert (Lebanese nights dessert)
Prep Time: 50 mins Chill time: 2 hours Serve: 6 persons
Ingredients:
- 1 Cup medium grains semolina
- 3 and half cups milk
- 2 Tablespoon sugar
- 1 Teaspoon rose water or vanilla extract
For Topping Cream:
- 3 slices toast bread
- 1 cup milk(250ml)
- (250ml) 1 cup heavy cream
- 1 tablespoon cornstarch
- 1 tablespoon sugar
- A cup of crushed pistachio or any other favorite nuts
Sugar syrup(or use Honey instead) :
- 2 cups sugar
- 1 and 1/4 cup water1 teaspoon lemon juice
- 1 Teaspoon rose water
Instructions
- In a medium heat stir semolina, milk and sugar. Stir constantly until thicken, then add rose water or vanilla extract.
- Pour the semolina mixture in a pyrex dish and let it cool.
- For topping cream: cut the bread into dices. In a saucepan add milk, cream, sugar and cornstarch. Stir to simmer on a medium heat, then add the bread dices. Keep stir, use hand blender to smooth the pudding. Remove from heat and pour into the semolina layer.
- Cover with plastic wrap and chill for 2 to 4 hours.
- To prepare sugar syrup, on a high heat boil sugar with water and lemon juice until thiken, add the rose water and remove from heat.
- Decorate with pistachio, and serve with sugar syrup or honey.
