From One Dough Make Different Appetizers

One of the best side dishes for your Christmas table is “From One Dough, Make Different Appetizers,” with any shape and any filling you wish. We are only two days away from Christmas, and this recipe will be on my Christmas table. The cool thing about this recipe is that it makes 35 appetizers, which is a large amount for your entire family and friends. If you have a small family, make half the dough. The half amount will be the following and make around 17 appetizers; you’ll need:

  • 1 Cup Milk
  • 1 1/2 Tablespoon Sugar
  • 1 Tablespoon yeast
  • 3 Cups (375g) all purpose flour
  • 1 Teaspoon salt
  • 2 Tbsp(30 g) soft butter

The filling is up to you; you can fill it with mozzarella cheese, feta cheese, parmesan cheese, or any type of filling you wish. This recipe can also be used to make dinner rolls or burger buns. That’s the great thing about this simple and soft dough: you can fill and shape it however you want.

It can also be used to make sweet buns like monkey bread or cinnamon rolls, or it can be filled with Nutella or cream pastry and shaped into a Christmas snowflake bread or tree.

Can I freeze the dough, and for how long can I keep it frozen?

You can freeze the dough right away after shaping it as you wish and freeze it for 3 months, but I really recommend using it before 1 month. I sometimes make a batch of mini pizzas that I keep ready to bake in my freezer.

One Dough, Different Appetizers

Ingredients

  • 2 Cups warm Milk
  • 3 Tablespoons Sugar
  • 2 Tablespoons yeast
  • 6 Cups (750g) all purpose flour
  • 1 Tablespoon salt
  • 4 Tbsp(60 g) soft butter

For filling

  • Mozzarella cheese
  • Balck olives sliced
  • Bell pepper
  • Feta cheese
  • ½ cup Zaatar
  • 1/4 cup olive oil
  • Pizza suace
  • Black seed
  • Sesame seed

For egg wash

  • 1 egg
  • 1 tsp water or milk

Instructions

  1. In the warm milk, melt the yeast with 1 tablespoon of the mentioned sugar amount and set aside for 5 minutes to ferment.
  2. In a mixer bowl, add the flour, remaining sugar, and salt. Give it a quick mix. Add the fermented milk and yeast mixture. Knead at slow speed, add soft butter, and keep kneading for 15 minutes until smooth and elastic.
  3. In a large bowl, grease the bowl and dough with olive oil. Cover it with a plastic wrap and leave it in a warm place for an hour until it ferments.
  4. Take a large ball of dough and flatten it with a rolling pin. Cut with a pizza cutter and move the pizzas to a baking sheet,. (See the video for more on how to form the dough). Fill with pizza sauce, mozzarella, black olive slices, and bell pepper.
  5. Brush the tops of the buns with egg wash and sprinkle with black seed and sesame.
  6. Bake in a preheated oven at 180°C (365°F) for 20 minutes or until golden.
  7. Enjoy!
