The Best Orange Cake

Ingredients

  • 4 eggs
  • 1 ¼ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 2 ½ cups all purpose flour
  • 1 tablespoon baking powder
  • ¼ teaspoon baking soda
  • 1 tablespoon orange zest
  • ¾ cup orange juice (200ml)
  • ½ cup vegetable oil (125 ml)

Instructions

  1. Grease and line the bottom of 22-cm round cake pan with parchment paper.
  2. Preheat the oven to 170°C (340°F).
  3. Using an electric mixer or stand mixer, place the eggs, salt, and vanilla extract. Beat the eggs on high speed for about 2 minutes until they're light and frothy. Gradually add in the granulated sugar while continuing to beat.
  4. Meanwhile, sift the flour, baking soda, and baking powder into a separate medium bowl. With gratar, peel the orange zest and take just the orange-colored zest.
  5. Add the zest to the dry ingredients.
  6. Squeeze 2 oranges to get 3/4 cup of fresh orange juice.
  7. To the egg mixture, add dry ingredients along with orange juice, and vegetable oil to three phases (Gently fold the sifted dry ingredients into the egg and sugar mixture. Use a spatula and make sure to fold gently to avoid deflating the air incorporated during the mixing process.)
  8. Pour the cake batter into the prepared cake pan. Gently tap the pan on the counter to remove any air bubbles.
  9. Place the pan in the preheated oven and bake for approximately 40 minutes, or until the cakes are golden brown and a toothpick inserted into the center comes out clean.
  10. Once the cake is done, remove it from the oven. Then, carefully invert the cake onto a wire rack to cool completely.
  11. Once the cake has cooled completely, sprinkle the top with powdered sugar or decorate as desired.
