- ¼ cup milk
- 2 tablespoons olive oil
- ½ cup all-purpose flour
- 1 medium zucchini about 1 cup, grated
- 2 tablespoons red bell pepper finely diced
- 2 tablespoons fresh parsley finely chopped
- 1 small red onion finely diced
- 1 cup shredded mozzarella cheese
- 1 teaspoon salt or to taste
- ½ teaspoon paprika
- Pinch of black pepper
- 8 tablespoons vegetable oil for frying
Grate the zucchini using the large holes of a box grater.
Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible. This step is essential to avoid soggy fritters.

Finely chop the fresh parsley.
