- 2 egg whites
- 1/3 cup 70g sugar
- 1¾ cups 120g shredded coconut
- ½ teaspoon vanilla extract
- Pinch of salt
- 60 g dark chocolate for dipping and decorating
Preheat your oven to 170°C (340°F) and line a baking sheet with parchment paper.
In a large bowl, whisk the egg whites, vanilla, and salt until slightly frothy. Gradually add the sugar while whisking continuously until the mixture looks glossy and forms a light, liquid meringue.
Gently fold the shredded coconut into the meringue using a spatula. Mix until everything combines evenly and the coconut is fully coated.
Use a small ice cream scoop or spoon to form medium-sized balls of the mixture. Place them evenly spaced on the prepared baking sheet.
Bake the macaroons for 15 minutes, or until they turn light golden brown around the edges.
Let the baked macaroons cool completely on a wire rack before adding the chocolate.
Place the dark chocolate in a microwave-safe bowl and heat it in 20-second intervals, stirring each time, until smooth and fully melted.
Dip the bottoms of the cooled macaroons into the melted chocolate and place them back on parchment paper. Pour any remaining chocolate into a small parchment piping bag and drizzle thin lines over the tops for a beautiful finish.
Refrigerate the macaroons for at least 20 minutes to set the chocolate before serving.
