Cuisine American
- 1 large egg
- 1 ½ tablespoons granulated sugar
- 1 teaspoon vanilla extract
- 1½ cups all-purpose flour
- 1½ tablespoons 15g baking powder
- ¼ teaspoon salt balances sweetness
- 1¼ cups milk
- 1 tablespoon unsalted butter
In a medium bowl, whisk together the egg, sugar, and vanilla extract until the sugar starts to dissolve and the mixture is slightly pale and frothy.
Pour in the milk and whisk again until fully combined.
In a large mixing bowl, whisk together the flour, baking powder, and salt.
Pour the wet mixture into the dry ingredients. Add the melted butter. Gently whisk until just combined. The batter should be thick but pourable.
Let the batter sit for 5–10 minutes (Optional but Recommended). This allows the gluten to relax and the baking powder to activate, yielding fluffier pancakes.
Heat a non-stick skillet over medium heat. Lightly grease with butter or oil.
Pour about ¼ cup of batter onto the skillet for each pancake.
Cook for 1–2 minutes, or until the edges look set.
Flip and cook for another 1 to 1½ minutes, until golden and cooked through.
Stack pancakes on a plate. Serve warm with a pat of butter, fresh fruits, maple syrup, or a dusting of powdered sugar.
