Ingredients
  

  • 1 large egg
  • 1 ½ tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • cups all-purpose flour
  • tablespoons 15g baking powder
  • ¼ teaspoon salt balances sweetness
  • cups milk
  • 1 tablespoon unsalted butter

Instructions
 

  • In a medium bowl, whisk together the egg, sugar, and vanilla extract until the sugar starts to dissolve and the mixture is slightly pale and frothy.
  • Pour in the milk and whisk again until fully combined.
  • In a large mixing bowl, whisk together the flour, baking powder, and salt.
  • Pour the wet mixture into the dry ingredients. Add the melted butter. Gently whisk until just combined. The batter should be thick but pourable.
  • Let the batter sit for 5–10 minutes (Optional but Recommended). This allows the gluten to relax and the baking powder to activate, yielding fluffier pancakes.
  • Heat a non-stick skillet over medium heat. Lightly grease with butter or oil.
  • Pour about ¼ cup of batter onto the skillet for each pancake.
  • Cook for 1–2 minutes, or until the edges look set.
  • Flip and cook for another 1 to 1½ minutes, until golden and cooked through.
  • Stack pancakes on a plate. Serve warm with a pat of butter, fresh fruits, maple syrup, or a dusting of powdered sugar.
