Easy Tiramisu Cake Roll

- 500 grams Mascarpone cheese
- 1/2 cup sugar 110g
- 1 teaspoon vanilla extract
- 300 ml heavy cream
- 1 cup hot water
- 1 tablespoon instant coffee
- Lady fingers 24 cookies
- 2 Tablespoons cocoa powder
Mix the cream cheese with the sugar and vanilla until the sugar dissolves, then add the heavy cream and mix until the mixture is smooth and creamy.
In another medium bowl, melt the instant coffee in the hot water.
Prepare a sheet of parchment paper or plastic wrap and use it to roll the cake.
Dip both sides of the lady finger cookies into the coffee, then line up the cookies on the plastic wrap.
Spread the cream cheese mixture over cookies. Sprinkle cocoa powder on top of the cream cheese.
Roll the cake up, then firmly close the plastic wrap on both sides.
Allow it to chill for 3 hours before decorating. Remove the plastic wrap and decorate the cake roll with the remaining cream cheese mixture, sprinkle cocoa powder, and top with chocolate chips and chocolate stars.
Chill for another 3 hours then serve.
