Ingredients

  • 2 eggs
  • ½ cup of milk
  • 1 teaspoon vanilla
  • 1 and 1/2 tablespoon sugar
  • Pinch of cinnamon
  • 10 Toast white bread
  • 4 tablespoon Butter or as needed
  • Powdered sugar for garnishing
  • For filling:
  • Nutella
  • 1 Banana cut into small cubes
  • 3 tablespoons of cream cheese
  • ¼ cup of sugar or to taste
  • ½ teaspoon vanilla
  • 1 Teaspoon lemon zest
  • ½ cup raspbarries or strawberries cut into cubes

Instructions

  • In a bowl, whisk together the eggs, milk, sugar, vanilla extract, and ground cinnamon until well combined. Set aside.
  • In a small bowl, mix the cream cheese with powdered sugar, lemon zest, and a splash of vanilla extract. Stir until smooth and creamy.
  • Trim the crusts off each slice of white bread. Use a rolling pin to flatten the slices evenly, they should be thin and pliable for easy rolling.
  • Filling Option 1: Spread a thin layer of Nutella over a slice of bread. Add a few banana slices, then gently roll it up.
  • Filling Option 2: Spread the cream cheese mixture on another slice, add a few fresh raspberries (or strawberries), and roll tightly.
  • Dip each rolled-up piece briefly in the egg mixture, making sure it’s fully coated but not soaked.
  • Heat a non-stick skillet over medium heat and melt about 1 tablespoon of butter. Place the roll-ups seam-side down and cook, turning occasionally, until all sides are golden brown and crisp. Work in batches if needed, adding a little more butter as necessary.
  • Dust with powdered sugar, garnish with extra fruit if desired, and serve warm.
