In the bowl of a stand mixer, place all the dough ingredients. I prefer to add the water gradually so the dough doesn’t become too sticky.
Knead the dough until it turns smooth and elastic. Cover the bowl with a clean towel and let it rest for about 1 hour, or until it doubles in size.
Meanwhile, prepare the filling. In a food processor, grate the onion, sweet pepper, and tomatoes. Finely chop the parsley as well.
In a large mixing bowl, combine the ground meat with the grated vegetables, parsley, tomato paste, and spices. Mix everything thoroughly with your hands until well combined.
Once the dough has risen, take a small ball of dough, sprinkle some flour on your work surface, and roll it out thin with a rolling pin.
Spread about 2 tablespoons of the meat mixture over the dough, smoothing it out evenly with the back of a spoon.
Heat a large pan and cook the pizza for about 5 minutes with the lid on. This step helps the base cook through.
Transfer the pizza to a hot oven and bake for 2 more minutes until the edges turn golden. This extra step adds a deeper flavor, though some people skip it—I never do!
Serve hot with fresh parsley, lemon wedges, or a crisp salad on the side.
