Orange Cupcakes
Ingredients
- 2 eggs
- ½ cup sugar
- 1 and 3/4 cups all purpose flour
- 1 tablespoon baking powder
- pinch of salt
- ½ cup orange juice
- 1 tablespoon orange zest
- ½ cup vegetable oil
- For decoration:
- Confectioners sugar
- 1 teaspoon orange zest
Instructions
- Prepare a muffin tin with placing cupcakes papers, then preheat the oven to 180°C.
- In a large bowl, beat the eggs and sugar with a hand whisk or electric mixer until the sugar is completely dissolved, then add the orange juice and vegetable oil. Mix well.
- Sift flour with baking powder.
- Add the sifted flour to the egg mixture in two stages, half the amount and mix, then the remaining half, until all the ingredients are well combined and you get a smooth cupcake batter.
- With an ice cream spoon fill the prepared cupcakes liners with the batter.
- Bake at 180°C for 25 minutes.
