Banana Oatmeal Pancakes with cream cheese sauce

Today is a sunny winter day in Belgium and when there is a sunny weather everything be active and ready for a lovely morning also the weather refers to a warm winter, can you believe in the middle of december we have a 12°C ! and since my kids are in school, i gave myself a delicious healthy Banana Oatmeal Pancakes with cream cheese sauce breakfast and enjoyed it!

We all know that, oatmeal helps you feel full because it is high in fiber and protein and also help reduce calories and fat accumulated in the body. Oatmeal maintains a healthy digestive system and prevents the absorption of fatty substances and many much of others benefits you can search for in google. Also, it is delicious and taste good away from the other healthy food lol 😀

 

I grounded oats in a food processor to have a powder oatmeal so the pancakes will be more fluffy and tasty, also i added only a half tablespoon of sugar you can add honey instead or stevia.

Mash with a fork one banana, add beaten egg and milk whisk together, add oatmeal, salt, baking powder and sugar. I added the vegetable oil lately so it won’t be a lumpy batter.

This ingredients will give you 8 pancakes, double the amounts if you want more pancakes.

  • Vegetable oil or melted butter

How to make banana oatmeal pancakes?( Full instruction below)

  • In a large bowl, mash 1 banana. Beat one egg, add it with milk into banana, whisk all together.
  • Add baking powder, salt to ground oatmeal.
  • Add oatmeal,  gradually with keeping whisk, add vehgetable oil. Whisk until a smooth pancake batter.
  • In a hot skillet on a medium heat, add  1/4 cup of pancake batter wait until the edges well hold, flip to other side until golden brown, remove from heat. Repeat.
  • I made a cream cheese sauce for my pancakes but you can serve yours with fruits or with maple syrup.

Oatmeal banana pancakes

PREP TIME: 5 mins        COOK TIME: 15 mins         TOTAL TIME: 20 mins       SERVINGS: 8 pancakes

INGREDIENTS

  • 1 Banana
  • 1 Egg
  • ½ Tsp vanilla
  • ½ Cup milk
  • 1 Tbsp Vegetable oil or melted butter
  • ¾ Cup Oatmeal (80 grams)
  • 1 Tsp Baking powder

For cream cheese sauce

  • 1 Tbsp cream cheese
  • 1/2 Tbsp powdered sugar
  • 3 Tbsp milk

INSTRUCTIONS

  1. In a large bowl, mash 1 banana make sure no large lumps.
  2. In a small bowl, beat one egg with vanilla,dd it with milk into banana, whisk all together.
  3. In a small bowl add baking powder, salt to ground oatmeal.
  4. Add oatmeal, gradually while keeping whisk, add vegetable oil. Whisk until you have a smooth pancake batter.
  5. In a hot skillet on a medium heat, add 1/4 cup of pancake batter wait until the edges well hold, flip to other side until golden brown, remove from heat. Repeat.
  6. For cream cheese sauce
  7. In a small bowl, cream the cheese with powdered sugar.
  8. Add milk gradually Until you reach a creamy crem cheese mixture or the desired mixture.
  9. Serve Pancakes with topping cremcheese suace.
  10. Enjoy!
