This is the best and easiest lentil soup recipe for your winter days, this soup is so benefit for health and ready in just 30 minutes. I love this easy creamy soup, it tastes so delicious and perfect for any time of your day. This famous winter middle eastern dish known as the winter meat, i love to add some dried mint to my soup it gives a very tasty flavour, just try it and you’ll be so satisfied of the result.

How to make an instant dried mint?

Simply, if you don’t have dried mint, just wash mint leaves and dry it in a kitchen towel, place it in a small dish and microwave it for 1 minute on a medium heat. Wait 1 minute to cool down, rub it with hands until you have a ground dried mint.

What kind of lentil to make best lentil soup recipe?

You’ll need 1 cup of red lentil for the best result.

Lentil Soup

Prep time: 5 minutes           Cooking time: 25 minutes             Yield: 4 soup bowls

Ingredients:

  • 1 cup of red lentils
  • 1 medium carrot, diced
  • A clove of Garlic
  • 1 Medium onion
  • 2 tablespoon of olive oil
  • 1 tablespoon of plin flour
  • 1 Litre water or vegetable broth
  • 1/2 teaspoon turmeric
  • 1 teaspoon of cumin
  • 1/2 teaspoon of dry mint
  • Pinch of black pepper (optional)
  • Salt, to taste

Instructions:

  1. In a pot, heat 2 tablespoons olive oil over high heat until hot and shimmering.
  2. Add onion, carrot and garlic, and sauté until golden, about 2 minutes. Add plain flour, give it a quick mix then add red lentils( i washed it and drain it from extra water), add broth or water. Bring it to a simmer, then add ground cumin, turmeric, black pepper and dry mint.
  3. partially cover pot and turn heat to medium-low. Simmer until lentils are soft, about 20 minutes. Taste and add salt.
  4. Using a hand blender or regular blender, purée the soup.
  5. Reheat soup if necessary.
  6. Serve soup drizzled with good olive oil and lemon juice (optional).
  7. Enjoy!
