Date Paste Recipe for Cookies and date squares Filling

Many people asked me to make Date paste recipe for cookies and date squares filling on my youtube channel, so here you are the best and easy pure date paste recipe

The lovely thing about this, is that you going to make your date paste without any extra adding or preservatives!  just a pure and natural date paste.

I use the date paste in many of my recipes as date squaes, date cookies, maamoul and date truffles. You can also add to your paste date your favourite taste to the date as cinnamon, cardamom, ground anise or sesame.

What type of date to use for Date Paste Recipe?

Use any good type of date preferred to be the soft type, that one with easy to mash and shape. I prefer to use the dark colour one it taste more sweeten and more mushy inside.

How long can i preserve my date paste?

You can preserve it without adding melted butter for a year, but it should place in a cold place until using then adding the melted butter or vegetable oil to give the paste more soften and firm paste.

Why should i cook it on a steam?
Well’ the steam will only soften the date but if you cook directly in the water the date will lose their sweetness and original lovely taste and also will lose much of benefits.

Easy and perfect Date paste for cookies , ma'amoul and date squares filling

Ingredients

  • 2 cups date
  • 2 tablespoon melted butter
  • 1 tablespoon water

Instructions

    Cut date in the middle as a line with a knife, remove seeds.

    In a saucepan bring 2 cups of water to a simmer (we need it as a steam to cook the date).
    Place date in a metal colander and put it above the saucepan without touching the hot water.

    Cook in a steam water for 20 minutes. When it soften, remove from steam.

    With a food processor or a fork mash the date, add water and melted butter and continue mashing until smooth and mushy dough. Remove any large white fibre.

    Use it immediatlyas a filling for date cookies, date squares or ma'amoul. Or cover with plastic wrap and reserve in a cold place until using it. If you want it to last for more than a month don't add butter until the day using it.
