My favorite is the coconut muffin recipe, maybe because I adore coconut, but I’m sure you’ll enjoy all three of these lovely and tasty muffins.
Tall Muffins: How to Make Them
Everyone prefers tall muffins, and the secret to making tall muffins is giving them an initial blast of high heat and then reducing the temperature, which helps create those beautifully domed, tall muffins.
Simply bake the muffins for 5 minutes at 220°C (425°F) and then, keeping the muffins in the oven, reduce the heat to medium at 180°C (365°F) for the remainder of the baking time.

- Having all ingredients as eggs, orange juice, milk and butter at room temperature helps your muffins puffs.
- Make a smooth muffin batter that traps air and expands when heated in the oven. That expansion makes your muffins fluffy and light.
- You can add one teaspoon of apple cider viniger which will work as a nutural baking improver.

Best Coconut Muffins Recipe Moist and fluffy
PERFECT DOUBLE CHOCOLATE MUFFINS
Ingredients
- 2 eggs
- 90g soft Butter
- 3/4 cup granulated Sugar
- 1 Tsp Vanilla extract
- 60g Yoghurt
- 1 1/3 cup all purpose flour
- 3 Tbsp unsweetened cocoa powder
- 1 Tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 100g chocolate chips
Instructions
- Prepare muffins liners by placing in a cupcakes mould, and preheat oven at 180 C/365F.
- In a large bowl, soften the butter with sugar, then add eggs one at a time with vanilla extract, whisk until you have a smooth egg mixture, add the yoghurt and give it a quick mix.
- In another bowl sift all the dry ingredient all purpose flour, unsweetened cocoa powder, baking powder and baking soda.
- Add sifted dry ingredient to eggs mixture at two phases. Mix all together until all well combine.
- Cut a dark chocolate bar into small pieces and add it to chocolate muffins batter (add your favorite chocolate chips) and mix with spatula until chocolate disappear in the batter.
- Spoon the batter with an ice cream scoop and fill about three quarter of each muffin liner.
- Top the muffins with more chocolate chips.
- Bake at 180°C for about 20 minutes.
- Cool on a wire rack.

Fluffy Orange Raisin Muffins
Ingredients
- 100g Soft Butter
- 1/2 cup Sugar (110g)
- 2 Eggs
- 1 Teaspoon Vanilla extract or powder
- 1 and 3/4 cup All purpose flour
- 1 Tablespoon Baking powder
- 1/2 Cup orange juice
- 1 Tablespoon orange zest
- 1/2 Cup raisin
Instructions
- Cream butter with sugar then add the eggs, one at a time with vanilla.
- Whisk until smooth eggs buttery batter.
- Sift flour with baking powder, add all the amount to the eggs batter.
- Add the orange juice, whisk all together until smooth muffin batter.
- Toss raisin with 1 teaspoon of flour until flour cover the raisin.
- Add orange zest with the raisin to the muffins batter, mix the batter with spatula just to spread the raisin in the batter.
- With an ice cream scoop, fill the muffin liners with the muffin batter.
- Bake for 25 minutes at 180°C . For a tall muffins, bake first at 220°C/420°F for 8 minutes then reduice the heat to 170°C/350°F for another 15 minutes.
- Cool on a wire rack.

Ingredients
- 1 and 3/4 cups all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- Pinch of salt
- 120g soft butter
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 125g yogurt or sour cream
- 1/4 cup milk
- 1 and 1/2 cups fresh or frozen blueberries
For topping (optional but it gives a crispy delicious layer):
- 1/4 cup brown sugar
- 1 teaspoon lemon zest

- Prepare muffins liners by placing in a cupcakes mould, and preheat oven at 180° C/ 365°F.
- In a large bowl, cream the butter with sugar, then add eggs one at a time with vanilla extract, whisk until you have a smooth egg mixture.
- Add yogurt and give the mixture a quick mix.
- In another bowl sift the dry ingredient, all purpose flour, baking soda, salt and baking powder.
- Add sifted dry ingredients to eggs mixture at two phases, with the milk.
- Mix all together until all well combine.
- Add blueberries, distribute in the batter.
- Spoon the batter with an ice cream scoop and fill each muffin liner.
- Toss the lemon zest with brown sugar, top the muffins with the mixture.
- Bake at 180°C/ 356F for about 25 minutes until gold color.
- Cool on a wire rack.
