Oatmeal Date Cookies
You’ll love these easy Oatmeal date cookies textures with old fashioned date filling and want to make time and time again.
What is special about this recipe is the date filling, as I developed this recipe by filling my favorite biscuit with my favorite filling, which ended with an amazing and tasty cookies.
I loved the cookies crispy outside and chewy inside with the lovely sweetness of date which have a lovely combination.
Also, i always use my homemade date paste to fill my cookies, it is easy to make and perfect for all different types of cookies, try it and i’m sure you’ll love it.
This recipe is also a vegan friendly as you see without adding any dairy products or eggs, also it is healthy and It can be eaten as a snack after daily exercise instead of protein bars.
How to make oatmeal date cookies?
- Ground the instant (quick) oats in a food processor.
- Place in a medium bowl. Add flour, salt, baking powder, maple syrup and vegetable oil. Mix all together, then add water gradually so you can control the consistency of the dough.
- Take a small ball of date paste, and a medium ball of the oatmeal dough.
- Fill the dough with date paste, close firmly and flatten with your hands palm. Repeat.
- Place cookies in a baking sheet covered with parchment paper.
- Bake in preheated oven 180°C/ 365°F for 7 minutes or until light golden edges.
- Cool down before serving.

Can i use rolled oats instead of instant oats?
Yes, you can this recipe is flexible and you can add peanut butter or honey to your dough instead of maple syrup and add some crushed nuts to your date.

- 2 Cups quick oatmeal
- ½ cup all purpose flour
- 2 ½ Tablespoons vegetable oil
- 2 ½ Tablespoons Maple Syrup
- 1/4 Teaspoon salt
- 1/4 Teaspoon Baking powder
- 3/4 Cup water
- 200g Date paste
Instructions
- Preheat oven at 180°C/ 365°F.
