Vegetable Salad – Healthy mixed Vegetable salad

This Vegetable Salad is so easy to make and full of vitamins and flavours. It is kind of the old fashioned middle eastern salad, also perfect for vegan and vegetarian folks.I’m trying my best to eat healthy food and i just addicted the salad recipes i made every day with my meal. Try this one and i promise you, you’ll be satisfied of the result.

Vegetable Salad

Prep time: 10 mins
Serving: 3 
 
Ingredients:
2 cups lettuce iceberg
1 cup cucumber
2 medium tomatoes
1 small red onion
1/2 cup radish
1/2 cup chopped parsley
1/4 cup chopped  mint
 
For dressing:
1 tsp lime zest
1 lime juice(3 tbsp)
1 clove of garlic (Optional)
Pinch of black pepper
Salt, to taste
2 Tbsp olive oil
 
The way:
 
Cut lettuce into slices. Cut cucumber, onion, tomatoes into medium dice. Cut radish into slices.
and roughly chopped parsley and mint. Place all vegetable in salad bowl.
Prepare the dressing by mixing all the dressing ingredients together.
Pour the dressing on salad mix all together until well combined.
